Steak Tips with Warm Wilted Spinach

 

This scrumptious salad is a perfect choice for brunch, lunch, or dinner since it takes less than 30 minutes to make. Plus, it’s packed with nutrition from grass-fed steak and antioxidant-rich spinach. We think you’ll want to keep this recipe handy — it’s sure to become a go-to!

Ingredients

  • 2 tablespoons avocado oil, or high-heat cooking oil of choice

  • 2 lbs. organic, grass-fed sirloin steak tips, cut into 2-inch pieces

  • ½ teaspoon sea salt

  • ½ teaspoon black pepper

  • ¼ cup chopped pistachios

  • 1 shallot, minced

  • 1 garlic clove, minced

  • 1 teaspoon fresh thyme, minced

  • 3 tablespoons lemon juice

  • 6 cups baby spinach

  • 1 pear, sliced thin

  • Optional: ½ cup goat's cheese, crumbled

Instructions

In a large skillet, add 1 tablespoon oil and heat over medium-high heat. Season steaks with salt and pepper. When the oil is smoking, add steaks and cook for 3-5 minutes per side or until cooked to the desired doneness.  Transfer to a plate and let rest while you prepare the rest of the salad.

In the skillet, add remaining oil, pistachios, shallot, garlic, and thyme. Stir to combine and cook over medium heat until pistachios are toasted, approx. 3-4 minutes. Add lemon juice and stir.

In a large bowl, add spinach and pear. Pour warm dressing mix over the spinach and toss. Let wilt slightly. Add cooked steak and optional goat's cheese.
