Nourishing Ginger Chicken Congee for Postpartum

Congee, a traditional rice porridge, is a comforting and easily digestible dish perfect for postpartum recovery. It provides warmth, hydration, and vital nutrients, aiding in healing and replenishing the body after childbirth. 

Ingredients:

  - 1 cup organic white rice (short-grain or jasmine for a smoother texture)

  - 8 cups organic chicken bone broth

  - 1 cup shredded, cooked, organic chicken

  - 3 slices fresh ginger (warming and aids digestion)

  - 1 cup spinach (rich in iron and vitamins)

  - 2 tablespoons goji berries (antioxidants)

  - 1 teaspoon salt

  - 1 tablespoon ghee

  - 1 tablespoon coconut aminos

  - Chopped green onions and cilantro


Instructions:

1. Rinse the rice under cold water until the water runs clear. Soak the rice for at least 30 minutes, preferably overnight.

2.  In a large pot, bring broth to a boil. Add the rice and ginger. Lower the heat and let it simmer, stirring occasionally to prevent sticking. Cook for about 1-1.5 hours until the rice has broken down and the congee reaches a creamy consistency.

3. Stir in the shredded chicken, and cook for an additional 10 minutes.

4. Add the spinach and goji berries, and cook until the greens are wilted.

5. Season the congee with salt, ghee, and coconut aminos.

6. Ladle the congee into bowls and garnish with chopped green onions and cilantro, if desired.

7. Consider additional toppings such as soft boiled egg, sliced mushrooms and sesame seeds.
