Bella’s Beet Soup Recipe
Ingredients:
3 medium-sized beets, peeled and diced
1 tbsp grass-fed butter or ghee
1 small onion, chopped
2 cloves garlic, minced
4 cups bone broth
1 lemon, juiced
1/2 tsp red chili flakes (or more to taste)
1 tsp dried thyme or rosemary
Salt and pepper, to taste
1/4 cup full-fat coconut milk or raw milk or cream
Fresh herbs (parsley or dill) for garnish (optional)
Instructions:
In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until soft and fragrant — about 3-5 minutes.
Add the diced beets to the pot and cook for another 5 minutes, stirring occasionally. This helps bring out their natural sweetness.
Pour in the bone broth, and bring the mixture to a boil. Reduce the heat to a simmer and cook for about 25-30 minutes, or until the beets are tender.
Once the beets are tender, remove the pot from heat. Use an immersion blender to carefully blend the soup until smooth and creamy. If you don’t have an immersion blender, you can transfer the soup in batches to a regular blender. Be sure to let it cool slightly before blending!
Stir in the lemon juice, red chili flakes, thyme (or rosemary), and season with salt and pepper to taste. You can adjust the heat by adding more chili flakes if you like it spicy.
Once everything is well combined, stir in the full-fat coconut milk or raw milk or cream for a rich, creamy texture.
Ladle the soup into bowls and garnish with fresh herbs if desired. Enjoy immediately, or store in the fridge for up to 3 days.
